You can choose to backup the current site that you are working on or all of the sites that you have. You can choose to not backup the sites at the current time by clicking on the Don't Backup Now button.
When you are backing up, by closing One Stop Order Processing or selecting
the Backup Now menu option (under Housekeeping menu option) you
are shown the following dialog:
